Radish and Cucumber Salad with Feta

Ingredients

  • 2 cups radishes, thinly sliced
  • 1 cucumber, thinly sliced
  • 1/2 cup crumbled feta cheese

  • 1 tablespoon red wine vinegar
  • Salt and black pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a large bowl, combine thinly sliced radishes and cucumber.
  2. Add crumbled feta cheese and chopped fresh dill to the bowl.
  3. In a small bowl, whisk together extra-virgin olive oil, red wine vinegar, salt, and black pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve the radish and cucumber salad with lemon wedges on the side.

Avocado and Radish Toast

Instructions

  1. In a bowl, combine mashed avocado, thinly sliced radishes, lemon juice, salt, and black pepper.
  2. Spread the avocado and radish mixture evenly over the toasted whole-grain bread slices.

Pickled Radish and Hummus Wrap

Ingredients

  • 4 large whole-grain wraps
  • 1 cup pickled radishes (store-bought or homemade)
  • 1 cup hummus
  • 2 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion
  • Salt and black pepper to taste

Instructions

  1. Lay out the whole-grain wraps on a clean surface.
  2. Spread a generous layer of hummus over each wrap. Place a portion of pickled radishes in the center of each wrap.
  3. Add mixed salad greens, halved cherry tomatoes, and sliced red onion on top of the radishes.
