Grilled Pineapple Chicken Skewers

Ingredients
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1 fresh pineapple, peeled, cored, and cut into chunks
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Wooden skewers, soaked in water
Instructions
- In a bowl, whisk together soy sauce, honey, olive oil, minced garlic, and grated ginger to create the marinade.
- Thread alternating pieces of chicken and pineapple onto the soaked skewers.
- Place the skewers in a shallow dish and pour the marinade over them. Allow to marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and pineapple has a nice char.
- Serve the grilled pineapple chicken skewers with rice or your favorite side.
Pineapple Fried Rice

- 2 cups cooked jasmine rice, chilled
- 1 cup pineapple chunks

- 1 tablespoon vegetable oil
- 2 cloves garlic, minced

Instructions
- In a wok or large pan, heat vegetable oil over medium-high heat.
- Add minced garlic and grated ginger, sauté for 30 seconds.
- Add mixed vegetables and cook until they start to soften.
- Stir in chilled jasmine rice, soy sauce, and sesame oil.
- Cook, stirring frequently, until the rice is heated through. Add pineapple chunks and toasted cashews. Toss to combine.
