June is here, and with it comes the true start of summer—longer days, warmer evenings, and a wave of new produce in our fields. It’s the perfect time to embrace seasonal eating, and at Ted’s Veg, we’re harvesting some of our favourite fresh veg to bring straight to your table.
🥬 What’s in Season This Month?
June marks a turning point in the veg calendar. While spring greens are still going strong, early summer crops are now arriving with colour, crunch, and flavour. Here’s what’s tasting great right now:
- Courgettes – Tender, mild, and incredibly versatile. Roast them, grill them, spiralise them!
- New Potatoes – Creamy, delicate, and a summer essential—no peeling needed.
- Broad Beans – Short season, big flavour. They’re best when young and sweet.
- Lettuce & Salad Leaves – Fresh-picked, crisp, and full of flavour—perfect for no-fuss meals.
- Radishes – Still in season and adding that peppery bite to your salads.
- Spring Onions – Mild and sweet, great raw or gently grilled.
- Spinach & Chard – Still holding strong in early summer, great for quiches and warm salads.

🛠️ Farm Tip of the Month: Mulch for Moisture
As temperatures rise, keeping crops hydrated becomes more of a challenge. One of the best things we do this time of year is mulch around our plants. Mulch helps soil retain moisture, suppress weeds, and regulate temperature—all while improving soil health over time.
Try this at home: If you grow your own herbs or salad leaves, add a layer of compost or straw mulch around the base. Your plants—and your watering can—will thank you.
🌼 Something to Try: A No-Cook Summer Salad
When the sun’s out, the last thing you want is to hover over a hob. Try a quick no-cook salad using:
- Chopped broad beans (blanched if you prefer)
- Thinly sliced radishes
- Shaved courgette ribbons
- Fresh mint and parsley
- A simple lemon + olive oil dressing
Toss it all together and serve it with crusty bread. Light, bright, and totally seasonal.
