Victoria Plum Crumble

Ingredients

  • 1 kg Victoria plums, pitted and halved
  • 100g granulated sugar
  • 1 tablespoon cornstarch
  • Zest of 1 lemon
  • 1 teaspoon ground cinnamon
  • 150g all-purpose flour
  • 100g rolled oats
  • 100g unsalted butter, chilled and diced
  • 100g brown sugar
  • Vanilla ice cream or custard, for serving

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, toss the halved Victoria plums with granulated sugar, cornstarch, lemon zest, and ground cinnamon until evenly coated. Transfer to a baking dish.
  3. In another bowl, combine the all-purpose flour, rolled oats, and brown sugar. Add the chilled diced butter and rub with your fingertips until the mixture resembles coarse crumbs.
  4. Sprinkle the crumble mixture evenly over the plums in the baking dish.
  5. Bake in the preheated oven for 35-40 minutes, or until the plum filling is bubbling, and the crumble topping is golden brown.
  6. Remove from the oven and let it cool slightly before serving.
  7. Serve warm with vanilla ice cream or custard.

Victoria Plum and Goat Cheese Salad

Ingredients

  • 500g Victoria plums, pitted and sliced
  • 100g mixed salad greens (such as spinach, arugula, and watercress)
  • 100g goat cheese, crumbled
  • 50g walnuts, chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the sliced Victoria plums, mixed salad greens, crumbled goat cheese, and chopped walnuts.
  2. Drizzle with balsamic vinegar and extra virgin olive oil. Season with salt and pepper to taste.
  3. Toss gently to combine all the ingredients.
  4. Divide the salad into serving plates and serve immediately.

Victoria Plum Chia Seed Jam

A unique and super tasty jam.

Ingredients

  • 500g Victoria plums, pitted and chopped
  • 3 tablespoons maple syrup or agave syrup
  • 2 tablespoons chia seeds
  • Juice of 1 lemon

Instructions

  1. In a saucepan, combine the chopped Victoria plums, maple syrup or agave syrup, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the plums are soft and begin to break down, about 10-12 minutes.
  3. Mash the plums with a fork or potato masher to desired consistency.
  4. Stir in the chia seeds and continue to cook for an additional 3-5 minutes, until the mixture thickens.
  5. Remove from heat and let the jam cool to room temperature.
  6. Transfer the jam to a sterilized jar and refrigerate until ready to use.
