Victoria Plum Crumble

- 1 kg Victoria plums, pitted and halved
- 100g granulated sugar
- 1 tablespoon cornstarch
- Zest of 1 lemon
- 1 teaspoon ground cinnamon
- 150g all-purpose flour
- 100g rolled oats
- 100g unsalted butter, chilled and diced
- 100g brown sugar
- Vanilla ice cream or custard, for serving
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, toss the halved Victoria plums with granulated sugar, cornstarch, lemon zest, and ground cinnamon until evenly coated. Transfer to a baking dish.
- In another bowl, combine the all-purpose flour, rolled oats, and brown sugar. Add the chilled diced butter and rub with your fingertips until the mixture resembles coarse crumbs.
- Sprinkle the crumble mixture evenly over the plums in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the plum filling is bubbling, and the crumble topping is golden brown.
- Remove from the oven and let it cool slightly before serving.
- Serve warm with vanilla ice cream or custard.

Instructions

- 3 tablespoons maple syrup or agave syrup
- 2 tablespoons chia seeds
- Juice of 1 lemon
Instructions
- In a saucepan, combine the chopped Victoria plums, maple syrup or agave syrup, and lemon juice.
- Cook over medium heat, stirring occasionally, until the plums are soft and begin to break down, about 10-12 minutes.
- Mash the plums with a fork or potato masher to desired consistency.
- Stir in the chia seeds and continue to cook for an additional 3-5 minutes, until the mixture thickens.
- Remove from heat and let the jam cool to room temperature.
- Transfer the jam to a sterilized jar and refrigerate until ready to use.
