- 1 1/4 cups all-purpose flour
- 1/4 cup almond flour
- 1/2 cup vegan butter, cold and cubed
- 3 tablespoons ice water
- 1 tablespoon sugar
- A pinch of salt
- 3 ripe pears, peeled, cored, and sliced
- 1/4 cup almond meal
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Sliced almonds for garnish
Instructions
- In a food processor, combine all-purpose flour, almond flour, sugar, and salt.
- Add cold, cubed vegan butter and pulse until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time, pulsing until the dough comes together.
- Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface into a rough circle.
