Roasted Pears with Honey and Walnuts

Ingredients

  • 4 ripe but firm pears, halved and cored
  • 2 tablespoons honey
  • 1/4 cup chopped walnuts
  • 1 teaspoon cinnamon
  • Vanilla ice cream for serving (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pear halves on a baking sheet, cut side up.
  3. Drizzle honey over each pear half and sprinkle with chopped walnuts and cinnamon.
  4. Roast in the preheated oven for 20-25 minutes or until the pears are tender and caramelized.
  5. Serve the roasted pears warm, optionally with a scoop of vanilla ice cream.

Pear and Gorgonzola Salad with Balsamic Glaze

Vegan Pear and Almond Galette

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup almond flour
  • 1/2 cup vegan butter, cold and cubed
  • 3 tablespoons ice water
  • 1 tablespoon sugar
  • A pinch of salt
  • 3 ripe pears, peeled, cored, and sliced
  • 1/4 cup almond meal
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Sliced almonds for garnish

Instructions

  1. In a food processor, combine all-purpose flour, almond flour, sugar, and salt.
  2. Add cold, cubed vegan butter and pulse until the mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time, pulsing until the dough comes together.
  4. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out the chilled dough on a floured surface into a rough circle.
  7. Mix almond meal, maple syrup, vanilla extract, and ground cinnamon. Spread this mixture over the center of the rolled-out dough, leaving a border.
  8. Arrange sliced pears on top of the almond mixture.
  9. Fold the edges of the dough over the pears, creating a rustic galette.
  10. Brush the crust with a little water and sprinkle sliced almonds on top.
  11. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown. Allow to cool slightly before serving.
