Passion Fruit Cheesecake Bars

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1/4 cup passion fruit pulp (about 4-5 passion fruits)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (160°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
- In another mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add the eggs one at a time, beating well after each addition.
- Stir in the passion fruit pulp and vanilla extract until evenly incorporated.
- Pour the filling over the crust in the baking dish and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let it cool completely in the baking dish.
- Once cooled, refrigerate for at least 2 hours or until chilled and firm.
- Cut into bars and serve chilled.
Passion Fruit and Mango Smoothie Bowl

Ingredients
- 2 ripe mangoes, peeled and diced
- Pulp of 4-5 passion fruits
- 1 ripe banana, frozen
- 1/2 cup plain Greek yogurt
- 1/4 cup coconut milk (or any other milk of your choice)
- Toppings: sliced banana, sliced kiwi, granola, shredded coconut, chia seeds, sliced almonds, fresh berries, edible flowers (optional)
Instructions
- In a blender, combine the diced mangoes, passion fruit pulp, frozen banana, Greek yogurt, and coconut milk.
- Blend until smooth and creamy, adding more coconut milk if needed to reach your desired consistency.
- Pour the smoothie into a bowl.
- Top the smoothie bowl with sliced banana, sliced kiwi, granola, shredded coconut, chia seeds, sliced almonds, fresh berries, and edible flowers if desired.
- Serve immediately
Passion Fruit Sorbet
Duration: 3 hours 10 minutesSweet, tangy and delicious.

Ingredients
- Pulp of 8-10 passion fruits
- 1/2 cup granulated sugar
- 1/2 cup water
- 2 tablespoons lime juice
Instructions
- In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally, until the sugar has dissolved completely to make a simple syrup.
- Remove the simple syrup from heat and let it cool to room temperature.
- In a blender, combine the passion fruit pulp, cooled simple syrup, and lime juice.
- Blend until smooth.
- Pour the mixture into a shallow dish or ice cream maker and freeze for 3-4 hours, stirring every hour to break up any ice crystals, or follow the manufacturer’s instructions if using an ice cream maker.
- Once the sorbet is firm, scoop it into serving bowls or cones
