Classic Gooseberry Pie

Ingredients
- 4 cups fresh gooseberries, stems removed
- 1 1/4 cups granulated sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 package (14.1 ounces) refrigerated pie crusts
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the gooseberries, granulated sugar, cornstarch, cinnamon, salt, and lemon juice. Mix well and let sit for 10 minutes.
- Roll out one of the pie crusts and fit it into the bottom of a 9-inch pie dish.
- Pour the gooseberry mixture into the crust, spreading it out evenly.
- Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
- Brush the top crust with beaten egg and sprinkle with coarse sugar if desired.
- Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with aluminum foil.
- Allow the pie to cool before serving.
