Classic Gooseberry Pie

Ingredients

  • 4 cups fresh gooseberries, stems removed
  • 1 1/4 cups granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the gooseberries, granulated sugar, cornstarch, cinnamon, salt, and lemon juice. Mix well and let sit for 10 minutes.
  3. Roll out one of the pie crusts and fit it into the bottom of a 9-inch pie dish.
  4. Pour the gooseberry mixture into the crust, spreading it out evenly.
  5. Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  6. Brush the top crust with beaten egg and sprinkle with coarse sugar if desired.
  7. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with aluminum foil.
  8. Allow the pie to cool before serving.

Vegetarian Gooseberry and Feta Salad

Ingredients

  • 2 cups fresh gooseberries, halved
  • 4 cups mixed greens (such as arugula, spinach, and kale)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds, toasted
  • 1/4 red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine mixed greens, halved gooseberries, crumbled feta cheese, toasted almonds, and red onion.
  2. In a small mixing bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately as a refreshing and light meal or side dish.

Vegan Gooseberry and Spinach Smoothie
