- 2 boneless, skinless chicken breasts
- 1 head of cos lettuce, washed and chopped
- 1/2 cup Caesar dressing
- 1/2 cup croutons

Instructions
- Season chicken breasts with salt and pepper and grill until fully cooked. Slice into strips.
- In a large bowl, combine chopped cos lettuce, grilled chicken strips, croutons, and Caesar dressing.
- Toss until the salad is well coated.
- Top with grated Parmesan cheese.
- Serve with lemon wedges on the side for squeezing over the salad.

- 1 tablespoon rice vinegar
- 2 green onions, chopped
- Sesame seeds for garnish
Instructions
- In a pan, sauté crumbled tofu until golden brown.
- In a bowl, mix shredded carrots, julienned cucumber, hoisin sauce, soy sauce, sesame oil, rice vinegar, and green onions.
- Spoon the tofu and vegetable mixture into individual cos lettuce leaves.
- Garnish with sesame seeds before serving.
