Classic Caesar Salad with Grilled Chicken

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 head of cos lettuce, washed and chopped
  • 1/2 cup Caesar dressing
  • 1/2 cup croutons
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Season chicken breasts with salt and pepper and grill until fully cooked. Slice into strips.
  2. In a large bowl, combine chopped cos lettuce, grilled chicken strips, croutons, and Caesar dressing.
  3. Toss until the salad is well coated.
  4. Top with grated Parmesan cheese.
  5. Serve with lemon wedges on the side for squeezing over the salad.

Vegetarian Romaine Lettuce Wraps with Tofu

Ingredients

  • 1 block extra-firm tofu, pressed and crumbled
  • 1 head of cos lettuce, leaves separated
  • 1 cup shredded carrots
  • 1 cucumber, julienned
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. In a pan, sauté crumbled tofu until golden brown.
  2. In a bowl, mix shredded carrots, julienned cucumber, hoisin sauce, soy sauce, sesame oil, rice vinegar, and green onions.
  3. Spoon the tofu and vegetable mixture into individual cos lettuce leaves.
  4. Garnish with sesame seeds before serving.

Vegan Romaine Lettuce and Avocado Salad

Ingredients

  • 1 head of cos lettuce, torn into bite-sized pieces
  • 2 avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Toasted pumpkin seeds for garnish

Instructions

  1. In a large bowl, combine torn cos lettuce, sliced avocados, cherry tomatoes, sliced red onion, and chopped cilantro.
  2. Drizzle with lime juice and olive oil. Toss to combine.
  3. Season with salt and pepper to taste.
  4. Garnish with toasted pumpkin seeds before serving.
