Cherry Clafoutis

Ingredients
- 500g fresh cherries, pitted
- 3 large eggs
- 1 cup milk
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 180°C (350°F). Grease a pie dish or baking dish.
- Arrange the pitted cherries evenly in the bottom of the prepared dish.
- In a large bowl, whisk together the eggs, milk, flour, granulated sugar, vanilla extract, and salt until smooth.
- Pour the batter over the cherries in the dish.
- Bake in the preheated oven for 40-45 minutes, or until the clafoutis is puffed and golden brown on top.
- Remove from the oven and let it cool slightly.
- Dust with powdered sugar before serving.
- Serve warm or at room temperature.
Spinach and Cherry Salad

Ingredients
- 200g baby spinach leaves
- 1 cup fresh cherries, pitted and halved
- 1/4 cup sliced almonds, toasted
- 1/4 cup crumbled feta cheese (optional)
- Balsamic vinaigrette dressing
Instructions
- In a large salad bowl, combine the baby spinach leaves, halved cherries, toasted sliced almonds, and crumbled feta cheese (if using).
- Drizzle with balsamic vinaigrette dressing and toss gently to coat.
- Serve immediately as a refreshing side salad.
Cherry Nice Cream
Duration: 5 minutesEasy, sweet, oh so delicious.
Utensils
- Blender or food processor
Ingredients
- 2 cups frozen cherries
- 2 ripe bananas, peeled, sliced, and frozen
- 1/4 cup coconut milk or almond milk
- 1 tablespoon maple syrup or agave syrup (optional)
- Fresh cherries and mint leaves for garnish
Instructions
- In a blender or food processor, combine the frozen cherries, frozen banana slices, coconut milk or almond milk, and maple syrup or agave syrup (if using).
- Blend until smooth and creamy, scraping down the sides of the blender or food processor as needed.
- If the nice cream is too thick, add more coconut milk or almond milk, a tablespoon at a time, until desired consistency is reached.
- Transfer the cherry nice cream to serving bowls.
- Garnish with fresh cherries and mint leaves.
- Serve immediately as a delicious and healthy dessert or snack.
