Ingredients
- 6-8 ripe apricots, halved and pitted

Instructions
- Toast the slices of bread to your liking.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the apricots, granulated sugar, honey, lemon juice, vanilla extract, and ground cinnamon. Mix well.
