Red Plum Galette

Utensils

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 4-5 red plums, pitted and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 tablespoon butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • Coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the flour and salt. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, a tablespoon at a time, mixing until the dough comes together.
  4. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. In a separate bowl, toss the sliced plums with granulated sugar, cornstarch, vanilla extract, and lemon zest until evenly coated.
  6. On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter.
  7. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  8. Arrange the plum slices in the center of the dough, leaving about 2 inches of dough around the edges.
  9. Fold the edges of the dough over the plum filling, pleating as needed.
  10. Dot the plum filling with pieces of butter.
  11. Brush the edges of the galette with beaten egg and sprinkle with coarse sugar.
  12. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the plums are tender.
  13. Allow the galette to cool slightly before serving. Serve warm or at room temperature.

Red Plum and Arugula Salad with Goat Cheese

Ingredients

  • 4-5 red plums, pitted and sliced
  • 4 cups baby arugula
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped toasted walnuts

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  2. In a large salad bowl, combine the baby arugula, sliced red plums, crumbled goat cheese, and chopped toasted walnuts.
  3. Drizzle the dressing over the salad and toss gently to coat evenly.
  4. Serve the red plum and arugula salad immediately as a refreshing appetizer or side dish.

Red Plum Chia Seed Jam

Ingredients

  • 2 cups sliced red plums
  • 2 tablespoons maple syrup or agave syrup
  • 2 tablespoons chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a saucepan, combine the sliced red plums and maple syrup (or agave syrup) over medium heat.
  2. Cook the plums, stirring occasionally, until they begin to soften and release their juices, about 5-7 minutes.
  3. Mash the softened plums with a fork or potato masher to break them down further.
  4. Stir in the chia seeds, vanilla extract, and a pinch of salt.
  5. Continue to cook the mixture, stirring frequently, until it thickens to a jam-like consistency, about 10-15 minutes.
  6. Remove the saucepan from heat and let the jam cool to room temperature. It will thicken further as it cools.
  7. Transfer the red plum chia seed jam to a clean jar or container and refrigerate until ready to use.
  8. Serve the jam on toast, pancakes, oatmeal, or as a topping for yogurt or desserts.
