Roasted January King Cabbage Wedges

Ingredients

  • 1 head January King cabbage
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the January King cabbage into wedges, removing the tough core.
  3. Place the cabbage wedges on a baking sheet lined with parchment paper.
  4. In a small bowl, mix together the olive oil, minced garlic, smoked paprika, salt, and pepper.
  5. Brush the olive oil mixture over the cabbage wedges, making sure to coat them evenly.
  6. Roast in the preheated oven for 25-30 minutes, or until the cabbage is tender and lightly browned.
  7. Serve the roasted January King cabbage wedges hot as a flavorful side dish.

January King Cabbage and Potato Gratin

A deeply rich and delicious potato gratin.

Ingredients

  • 1 head January King cabbage, thinly sliced
  • 2 large potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 1 cup grated Gruyère cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
  2. Layer half of the sliced potatoes in the bottom of the prepared baking dish.
  3. Spread half of the sliced January King cabbage and half of the sliced onion over the potatoes.
  4. Sprinkle half of the minced garlic and half of the grated Gruyère cheese over the cabbage layer.
  5. Season with salt and pepper to taste.
  6. Repeat the layers with the remaining potatoes, cabbage, onion, garlic, and Gruyère cheese.
  7. Pour the heavy cream evenly over the top of the gratin.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 40-45 minutes.
  9. Remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
  10. Garnish with fresh thyme leaves before serving.

January King Cabbage Soup

Duration: 65 minutes

Ingredients

  • 1 head January King cabbage, shredded
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, and cook until softened.
  2. Add minced garlic, dried thyme, and dried oregano, and cook for another minute until fragrant.
  3. Pour in vegetable broth and diced tomatoes (with their juices). Bring the soup to a boil.
  4. Reduce the heat to low and simmer for 15-20 minutes.
  5. Add shredded January King cabbage to the pot and simmer for an additional 10-15 minutes, or until the cabbage is tender.
  6. Season the soup with salt and pepper to taste.
  7. Ladle the January King cabbage soup into bowls and garnish with fresh parsley before serving.
