Classic Bramley Apple Pie

Ingredients
- 6 large Bramley apples, peeled, cored, and sliced
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons cornstarch
- Pastry for a double-crust pie
- 2 tablespoons butter, cut into small pieces
- Milk (for brushing the crust)
- Demerara sugar (for sprinkling)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine sliced Bramley apples, sugar, cinnamon, and cornstarch. Toss until the apples are evenly coated.
- Roll out half of the pastry and line a pie dish. Pour in the apple mixture and dot with butter.
- Roll out the remaining pastry and place it over the filling. Seal the edges and cut slits on the top for ventilation.
- Brush the crust with milk and sprinkle with Demerara sugar.
- Bake for 45-50 minutes or until the crust is golden and the filling is bubbly. Allow the pie to cool before slicing.
Bramley Apple Crumble

- 1/2 cup brown sugar
- 1/2 cup unsalted vegan butter, softened
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix sliced Bramley apples with sugar and cinnamon. Transfer to a baking dish.
- In a separate bowl, combine flour, rolled oats, brown sugar, and softened butter. Mix until crumbly.
- Sprinkle the crumble topping evenly over the apples and bake for 30-35 minutes or until the topping is golden and the apples are tender. Allow to cool slightly before serving.

- 1/4 cup water
- 1/4 cup granulated sugar (adjust to taste)
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- In a saucepan, combine chopped Bramley apples, water, sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the apples are soft and can be easily mashed.
- Mash the apples to your desired consistency. Add more sugar if needed.
- Optionally, stir in ground cinnamon for extra flavor. Allow the applesauce to cool before serving.
