Recipe Page: Cherries

Cherry Clafoutis

Duration: 60 minutes

Sweet, full of flavour and beyond moreish.

Utensils

  • Pie dish or baking dish

Ingredients

  • 500g fresh cherries, pitted
  • 3 large eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a pie dish or baking dish.
  2. Arrange the pitted cherries evenly in the bottom of the prepared dish.
  3. In a large bowl, whisk together the eggs, milk, flour, granulated sugar, vanilla extract, and salt until smooth.
  4. Pour the batter over the cherries in the dish.
  5. Bake in the preheated oven for 40-45 minutes, or until the clafoutis is puffed and golden brown on top.
  6. Remove from the oven and let it cool slightly.
  7. Dust with powdered sugar before serving.
  8. Serve warm or at room temperature.

Spinach and Cherry Salad

Duration: 10 minutes

A light and tasty salad.

Utensils

  • Salad bowl

Ingredients

  • 200g baby spinach leaves
  • 1 cup fresh cherries, pitted and halved
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup crumbled feta cheese (optional)
  • Balsamic vinaigrette dressing

Instructions

  1. In a large salad bowl, combine the baby spinach leaves, halved cherries, toasted sliced almonds, and crumbled feta cheese (if using).
  2. Drizzle with balsamic vinaigrette dressing and toss gently to coat.
  3. Serve immediately as a refreshing side salad.

Cherry Nice Cream

Duration: 5 minutes

Easy, sweet, oh so delicious.

Utensils

  • Blender or food processor

Ingredients

  • 2 cups frozen cherries
  • 2 ripe bananas, peeled, sliced, and frozen
  • 1/4 cup coconut milk or almond milk
  • 1 tablespoon maple syrup or agave syrup (optional)
  • Fresh cherries and mint leaves for garnish

Instructions

  1. In a blender or food processor, combine the frozen cherries, frozen banana slices, coconut milk or almond milk, and maple syrup or agave syrup (if using).
  2. Blend until smooth and creamy, scraping down the sides of the blender or food processor as needed.
  3. If the nice cream is too thick, add more coconut milk or almond milk, a tablespoon at a time, until desired consistency is reached.
  4. Transfer the cherry nice cream to serving bowls.
  5. Garnish with fresh cherries and mint leaves.
  6. Serve immediately as a delicious and healthy dessert or snack.
