Banana Bread

Ingredients
- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup granulated sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8-inch loaf pan.
- In a mixing bowl, combine mashed bananas, melted butter, sugar, beaten egg, and vanilla extract.
- Sprinkle baking soda and salt over the mixture and mix in.
- Add the flour last, mix well.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool in the pan for a few minutes.
- Then transfer to a wire rack to cool completely before slicing.
Banana and Peanut Butter Smoothie

- 1 cup milk (dairy or plant-based)
- 1/2 cup Greek yogurt
- 1 tablespoon honey (optional)

Instructions
- Place all ingredients in a blender.
- Blend until smooth and creamy.
- Taste and adjust sweetness with honey, if desired.
- Pour into glasses and serve immediately.
Banana Nice Cream

- Container (if freezing for a firmer texture)
Ingredients
- 4 ripe bananas, peeled, sliced, and frozen
- 2 tablespoons plant-based milk (such as almond or coconut milk)
- Optional toppings: chopped nuts, shredded coconut, chocolate chips, fresh fruit
Instructions
- Place the frozen banana slices in a food processor or high-powered blender.
- Add the plant-based milk.
- Blend until smooth and creamy, scraping down the sides of the bowl as needed.
- If the mixture is too thick, you can add more plant-based milk, a little at a time, until you reach your desired consistency.
- Serve immediately as soft-serve ice cream or transfer to a container and freeze for a firmer texture.
- Enjoy as is or add your favorite toppings before serving.
