French Onion Soup

Ingredients
- 4 large yellow onions, thinly sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 cups beef or vegetable broth
- 1 cup red wine (optional)
- 1 teaspoon Worcestershire sauce (optional)
- Salt and black pepper to taste
- Baguette slices
- Gruyere or Swiss cheese, grated
Instructions
- In a large pot, melt the butter with olive oil over medium heat. Add the thinly sliced onions and cook slowly until caramelized, about 30-40 minutes.
- Pour in the beef or vegetable broth and red wine (if using). Add Worcestershire sauce, salt, and black pepper. Simmer for an additional 15-20 minutes.
- Preheat the broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of baguette and sprinkle grated cheese over the top.
- Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes. Serve hot, being careful as the bowls will be very hot.
Caramelized Onion and Mushroom Quiche

- 1 pre-made pie crust
- 2 large yellow onions, thinly sliced
- 2 cups mushrooms, sliced
- 4 eggs
- 1 cup milk or heavy cream
- 1 cup shredded Gruyere or Swiss cheese
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Place the pie crust in a pie dish and set aside.
- In a skillet, heat some olive oil over medium heat. Add the thinly sliced onions and cook slowly until caramelized, about 30-40 minutes.
- Add the sliced mushrooms to the skillet with the caramelized onions and cook for an additional 5-7 minutes until the mushrooms are softened.
- In a bowl, whisk together the eggs, milk or cream, shredded cheese, salt, and black pepper.
- Spread the caramelized onions and mushrooms evenly in the pie crust. Pour the egg mixture over the top.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top.
- Let the quiche cool for a few minutes before slicing. Garnish with fresh parsley if desired.
- Serve warm or at room temperature.
Vegan French Onion Dip

Instructions
- Heat olive oil in a skillet over medium heat. Add the thinly sliced onions and cook slowly until caramelized, about 30-40 minutes.
- In a bowl, mix together the vegan mayonnaise, vegan sour cream, and Worcestershire sauce. Season with salt and black pepper to taste.
- Once the onions are caramelized, let them cool slightly, then chop them finely and stir them into the vegan mayonnaise mixture.
- Garnish with fresh chives if desired.
